Great for weeknight meals, food ideas for families, or those craving a twist on traditional enchiladas.

Ingredients

Scale

1 lb ground beef

1 (10 oz) can red enchilada sauce

1 (14.5 oz) can diced tomatoes

1 package (20 oz) cheese tortellini

1 cup shredded cheddar cheese

½ cup sour cream

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Optional: chopped cilantro, green onions, extra cheese

Instructions

1. Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Season with salt, pepper, cumin, and chili powder. Drain excess grease if needed.

2. Add enchilada sauce and diced tomatoes to the skillet. Stir to combine and let it simmer for 3–4 minutes.

3. Stir in the cheese tortellini. Cover and simmer for 5–6 minutes, stirring occasionally, until pasta is tender.

4. Lower the heat. Stir in shredded cheddar cheese until melted. Gently mix in sour cream to create a creamy sauce.

5. Garnish with fresh cilantro, green onions, or extra cheese if desired. Serve hot and enjoy.

Notes

Let the enchilada sauce simmer with the beef to deepen flavor before adding pasta.

Always stir in cheese and sour cream at the end to keep the sauce smooth and creamy.

This dish is easily customizable—try adding corn, black beans, or diced peppers for extra texture and flavor.
