- 2–3 tbsp extra virgin olive oil (plus more for drizzling)
- 1–2 tbsp honey (to taste)
- Freshly ground black pepper
- A handful of fresh mint leaves (for garnish)
- Optional: 2–3 tbsp Greek yogurt (for a lighter, silkier feta)
Instructions
-
Preheat the oven to 400°F (200°C).
-
Prepare the strawberries: Place hulled and sliced strawberries on a parchment-lined baking sheet. Drizzle with olive oil and honey. Toss gently to coat.

Roast the strawberries in the oven for 15–18 minutes, until soft, juicy, and slightly caramelized.
-
Whip the feta: While the strawberries roast, add feta to a food processor. Add olive oil and optional Greek yogurt. Blend until smooth and creamy, scraping down the sides as needed.
-
Assemble: Spoon whipped feta onto a serving plate, creating swirls with the back of a spoon.
-
Top with roasted strawberries and their juices.
-
Finish with a drizzle of olive oil, a touch of honey, freshly ground black pepper, and scattered mint leaves.
-
Serve immediately with your choice of toasted bread, crackers, or alongside grilled meats or greens.
