  • 200g (about 7 oz) feta cheese (block in brine)
  • 250g (about 8 oz) fresh strawberries, hulled and halved or quartered
  • 23 tbsp extra virgin olive oil (plus more for drizzling)
  • 12 tbsp honey (to taste)
  • Freshly ground black pepper
  • A handful of fresh mint leaves (for garnish)
  • Optional: 2–3 tbsp Greek yogurt (for a lighter, silkier feta)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the strawberries: Place hulled and sliced strawberries on a parchment-lined baking sheet. Drizzle with olive oil and honey. Toss gently to coat.

  3. Roast the strawberries in the oven for 15–18 minutes, until soft, juicy, and slightly caramelized.

  4. Whip the feta: While the strawberries roast, add feta to a food processor. Add olive oil and optional Greek yogurt. Blend until smooth and creamy, scraping down the sides as needed.

  5. Assemble: Spoon whipped feta onto a serving plate, creating swirls with the back of a spoon.

  6. Top with roasted strawberries and their juices.

  7. Finish with a drizzle of olive oil, a touch of honey, freshly ground black pepper, and scattered mint leaves.

  8. Serve immediately with your choice of toasted bread, crackers, or alongside grilled meats or greens.
