2 medium apples (Granny Smith or Honeycrisp), diced

2 tablespoons butter

1/3 cup brown sugar

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

1 sheet pie dough (store-bought or homemade)

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

1/4 cup caramel sauce


Instructions

1. Peel and dice the apples into small chunks.

2. In a saucepan, melt butter over medium heat, then add apples, brown sugar, cinnamon, nutmeg, and cornstarch.

3. Cook until the apples are tender and mixture thickens. Stir in vanilla extract. Let cool.

4. Roll out the pie dough to 1/8 inch thick. Cut into 3–4 inch rounds using a cookie cutter or glass.

5. Place the dough rounds on a parchment-lined baking sheet.

6. Spoon a small amount of the apple mixture into the center of each round.

7. Fold the edges slightly inward to create a rustic border.

8. Brush edges with beaten egg and sprinkle with coarse sugar.

9. Bake at 375°F (190°C) for 18–22 minutes until golden brown.
