Ingredients

Scale

4 ears corn on the cob

1/2 cup unsalted butter

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon chives, chopped

1 tablespoon lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1/2 teaspoon red pepper flakes

Salt, to taste

Black pepper, to taste

Instructions

1. Melt the butter in a small saucepan over low heat.

2. Stir in garlic, lemon zest, lemon juice, Dijon mustard, parsley, chives, red pepper flakes, salt, and black pepper. Let it simmer gently for 1 minute.

3. Preheat oven to 425°F (220°C).

4. Prepare corn by removing husks and silk, cutting in halves if desired. Pat dry.

5. Place corn on a lined baking sheet. Brush generously with cowboy butter.

6. Roast for 20–25 minutes, flipping halfway, until golden and slightly charred.

7. Remove from oven and brush with more cowboy butter while hot.

8. Garnish with extra herbs or lemon zest if desired.

9. Serve immediately and enjoy while warm.

Notes

Use fresh, sweet corn for best texture and flavor.

Always brush corn before and after roasting to layer in more flavor.

Adjust heat level in cowboy butter by adding more or less red pepper flakes.
