6 cups Rice Chex cereal

1 ½ cups white chocolate chips or white candy melts

4 oz cream cheese, softened

1 tbsp unsalted butter

1 cup powdered sugar

1 box (3.4 oz) instant cheesecake pudding mix (dry)

1 tsp lemon zest

½ tsp pure vanilla extract

½ cup freeze-dried blueberries

Pinch of salt


Instructions

1. Prepare a large mixing bowl and a parchment-lined baking sheet. Add Rice Chex cereal to the bowl.

2. In a microwave-safe bowl, combine white chocolate chips, cream cheese, and butter. Microwave in 20–30 second intervals, stirring in between until smooth.

3. Stir in lemon zest, vanilla extract, and salt into the melted mixture.

4. Pour the coating over the cereal in small batches, gently folding with a spatula to avoid breaking the cereal.

5. In a zip-top bag, mix powdered sugar and dry cheesecake pudding mix. Add the coated cereal to the bag, seal, and shake until coated.

6. Gently fold in the freeze-dried blueberries. Spread the mixture out on the baking sheet to cool completely.
