250g flank steak or ribeye, thinly sliced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon brown sugar

1 teaspoon rice vinegar

2 cloves garlic, minced

1/2 teaspoon ground black pepper

1 teaspoon gochujang

1 teaspoon sesame seeds (optional)

2 packs Korean instant ramen noodles

1 tablespoon gochujang

1 tablespoon soy sauce

2 teaspoons chili oil or Korean chili flakes

1 tablespoon unsalted butter

1 teaspoon sugar

2 tablespoons water

1 clove garlic, minced

Few drops toasted sesame oil (optional)

2 tablespoons mayonnaise (Kewpie preferred)

1 teaspoon rice vinegar

1 teaspoon soy sauce

1 teaspoon sriracha

1/2 teaspoon sugar

Pinch garlic powder

Splash water (to thin sauce if needed)

2 stalks scallions, chopped

Extra sesame seeds (for garnish)

Fresh herbs or microgreens (optional)


Instructions

1. In a bowl, combine soy sauce, sesame oil, brown sugar, rice vinegar, garlic, black pepper, and gochujang. Add sliced beef and marinate for at least 30 minutes.

2. Mix mayonnaise, rice vinegar, soy sauce, sriracha, sugar, and garlic powder in a bowl. Thin with a splash of water if needed. Chill until ready.

3. Boil ramen noodles for 1 minute less than the package directions. Drain and toss lightly in oil to prevent sticking.

4. In a saucepan, melt butter and sauté minced garlic. Add gochujang, soy sauce, chili oil, sugar, and water. Simmer for 1–2 minutes until thickened.

5. Toss cooked noodles in the spicy sauce until well coated and glossy.

6. Heat a grill pan or cast iron skillet over high heat. Grill marinated beef 1–2 minutes per side until nicely charred.
