8 small flour or corn tortillas
1 1/2 cups red enchilada sauce
2 cups shredded Mexican blend cheese

1 teaspoon chili powder
1/2 cup sour cream (for topping, optional)
1/4 cup chopped fresh cilantro (for garnish, optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, sauté chopped onions and garlic until soft. Add cumin and chili powder, stir briefly.
3. Combine sautéed mixture with shredded chicken and 1/4 cup enchilada sauce plus 1/2 cup shredded cheese.
