Description
Tortellini Soup is a hearty, comforting dish packed with Italian sausage, cheese-filled tortellini, vegetables, and a rich tomato broth. Perfect for cozy dinners, it’s easy to prepare and full of flavor—ideal for busy weeknights or weekend gatherings.
Ingredients
1 lb Italian sausage
1 medium onion, diced
3 cloves garlic, minced
2 carrots, peeled and sliced
1 can (28 oz) crushed tomatoes
4 cups chicken broth
10 oz refrigerated cheese tortellini
3 cups fresh spinach
1 tsp Italian seasoning
Salt and pepper to taste
Parmesan cheese, for serving
Instructions
1. In a large soup pot, brown the Italian sausage over medium heat. Remove and set aside.
2. Add onion and carrots to the same pot. Sauté until soft. Stir in garlic and cook for 1 minute.
3. Add crushed tomatoes and chicken broth. Return sausage to pot. Season with Italian seasoning, salt, and pepper. Bring to a boil.
4. Reduce heat and simmer for 15 minutes.
5. Add tortellini and cook according to package instructions (about 4–6 minutes).
6. Stir in spinach and cook until wilted.
7. Taste and adjust seasoning. Serve hot with grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Freeze the soup base (without tortellini) for up to 2 months. Reheat gently and add fresh tortellini before serving. Avoid overcooking pasta for best texture.
