  • 1 pound shrimp (peeled and deveined)
  • 8 ounces spaghetti (or pasta of choice)
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • 1 cup pasta cooking water (reserved)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, then drain, reserving 1 cup of pasta water.
  2. While pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes on each side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. In the same skillet, add the remaining olive oil and butter. Melt the butter, then add minced garlic and sauté for 30 seconds until fragrant.
  4. Add halved cherry tomatoes and cook for 2-3 minutes until they begin to soften. Add fresh spinach and cook for another 2-3 minutes, until wilted.
  5. Return shrimp to the skillet, and stir in heavy cream. Season with salt, pepper, and red pepper flakes if desired. Add reserved pasta water to create a silky sauce.
  6. Add the cooked pasta to the skillet and toss everything together, allowing the pasta to soak up the sauce. Sprinkle with Parmesan cheese, stir, and adjust seasoning if needed.
  7. Serve immediately, garnished with additional Parmesan and freshly cracked black pepper.
