  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 ¾ cups milk
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat eggs and mix in milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (some lumps are okay).
  4. Let the batter rest for 5-10 minutes to allow leavening agents to activate.
  5. Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  6. Pour ¼ cup of batter onto the skillet for each pancake.
