Meatloaf:
- 2 lbs ground beef (80/20 preferred)
- 1 cup breadcrumbs
- 2 eggs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup milk
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp dried oregano or thyme
- 1/2 tsp red pepper flakes (optional)
Glaze:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
- Mix the meatloaf ingredients in a large bowl until just combined. Avoid overmixing.
- Shape the meat mixture into a loaf and place it on a baking sheet or into a loaf pan.
- Prepare the glaze by mixing ketchup, brown sugar, vinegar, and mustard in a small bowl.
- Apply half of the glaze over the meatloaf before baking.
- Bake for 40 minutes, then brush the remaining glaze on top.
- Continue baking for another 15-20 minutes or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing. Serve warm.
