Meatloaf:

  • 2 lbs ground beef (80/20 preferred)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried oregano or thyme
  • 1/2 tsp red pepper flakes (optional)

Glaze:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. Mix the meatloaf ingredients in a large bowl until just combined. Avoid overmixing.
  3. Shape the meat mixture into a loaf and place it on a baking sheet or into a loaf pan.
  4. Prepare the glaze by mixing ketchup, brown sugar, vinegar, and mustard in a small bowl.
  5. Apply half of the glaze over the meatloaf before baking.
  6. Bake for 40 minutes, then brush the remaining glaze on top.
  7. Continue baking for another 15-20 minutes or until the internal temperature reaches 160°F (71°C).
  8. Let rest for 10 minutes before slicing. Serve warm.
