  • 14 oz smoked sausage, sliced into 1/4-inch rounds
  • 1 cup long grain white rice (uncooked)
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 1/4 cups chicken broth
  • 1 teaspoon paprika (smoked preferred)
  • Salt and black pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add sausage slices and brown for 3–4 minutes on each side. Remove and set aside.
  3. In the same pan, add diced onion and bell peppers. Sauté for 4–5 minutes until softened.
  4. Add minced garlic and cook for 1 more minute.
  5. Stir in the uncooked rice and toast for 1–2 minutes.
  6. Sprinkle in paprika, salt, and black pepper.
  7. Pour in chicken broth and return the sausage to the pan. Stir to combine.
  8. Bring to a boil, then reduce heat to low and cover.
  9. Simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  10. Remove from heat and let sit, covered, for 5 minutes.
  11. Fluff rice with a fork and garnish with chopped parsley if using.
