Ingredients
3 pounds russet or Yukon Gold potatoes
4 tablespoons butter
3 cloves garlic (optional)
1 cup heavy cream or whole milk
1/2 cup sour cream or cream cheese
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons chopped chives (optional)
Instructions
1. Peel and cut potatoes into even chunks, about 1 1/2 to 2 inches thick.
2. Place potato chunks and garlic in the crockpot with salt and enough water or broth to cover halfway.
3. Cook on HIGH for 3–4 hours or LOW for 6–7 hours, until potatoes are fork-tender.
4. Drain any excess liquid from the crockpot if needed.
5. Mash the potatoes directly in the crockpot using a masher or hand mixer.
6. Add butter, cream or milk, sour cream or cream cheese, and pepper. Mix until smooth.
7. Adjust seasoning to taste and stir in chives, if using.
8. Keep on “Warm” setting until ready to serve, stirring occasionally.
Notes
Use warm dairy when mixing in for smoother, creamier potatoes.
Don’t overmix to avoid gummy texture — mash just until smooth.
This recipe can be doubled, but make sure your crockpot has the space.
