  • 2 lbs beef chuck roast, cut into chunks
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine (optional)
  • 4 cups beef broth
  • 3 large carrots, sliced
  • lbs baby potatoes, halved
  • 1 cup frozen peas
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • Salt and black pepper, to taste

Instructions

  1. Pat the beef chunks dry and season with salt and pepper. Toss with flour to coat lightly.
  2. In a large pot, heat olive oil over medium-high heat. Brown the beef in batches, then set aside.
  3. Lower the heat to medium. Sauté onions until translucent, then add garlic and cook for 1 minute. Stir in tomato paste.
  4. Deglaze with red wine, scraping up browned bits. Let it reduce for 2–3 minutes.
  5. Add beef broth, browned beef, bay leaves, and thyme. Bring to a simmer.
  6. Stir in carrots and potatoes. Cover and simmer on low for 1½ to 2 hours, stirring occasionally.
  7. In the final 10 minutes, add peas. Adjust seasoning with salt and pepper. Remove bay leaves and thyme stems.
  8. Serve hot with your favorite side.
