Ingredients
2 cups green papaya (shredded)
1 cup carrots (shredded)
2 cloves garlic
2–3 red chilies
2 tbsp lime juice
1 ½ tbsp fish sauce
1 tbsp palm sugar
1 cup cherry tomatoes (halved)
½ cup long green beans (cut)
2 tbsp crushed peanuts
2 tbsp fresh cilantro (chopped)
1 tbsp dried shrimp (optional)
Instructions
1. Peel and shred the green papaya and carrots into thin strips. Prepare the green beans and halve the cherry tomatoes.
2. Pound garlic and chilies into a coarse paste using a mortar and pestle.
3. Add palm sugar and mash until partially dissolved.
4. Mix in lime juice and fish sauce to form the dressing.
5. Add papaya, carrots, green beans, and tomatoes.
6. Gently pound and toss to combine while keeping texture crisp.
7. Add dried shrimp if using and mix well.
8. Transfer to a plate and garnish with peanuts and cilantro.
9. Taste and adjust seasoning before serving.
