1 bag frozen dumplings
2 blocks instant ramen noodles
1 can (14 oz) full-fat coconut milk
2 tablespoons red curry paste
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons soy sauce
2 cups vegetable or chicken broth
2 tablespoons chili crisp or chili oil
2 green onions, sliced
1 handful fresh cilantro, chopped
1 tablespoon lime juice
Instructions
1. In a large oven-safe skillet or casserole dish, heat a splash of oil over medium heat. Sauté garlic and ginger until fragrant, about 1-2 minutes.
2. Stir in the red curry paste and cook for 30 seconds to deepen flavor.
