These Thai Basil Beef Rolls are a bold, refreshing twist on classic rice paper rolls, blending juicy ground beef, fragrant Thai basil, garlic, and a punchy savory-sweet sauce all wrapped in soft rice paper. Whether you’re after quick breakfast ideas, healthy snack options, or easy dinner recipes, these flavorful rolls fit the bill — fast to prep, fun to assemble, and packed with vibrant, satisfying taste.

Ingredients

Scale

8 rice paper wrappers

1 pound ground beef

1 cup Thai basil leaves

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

2 scallions, finely chopped

½ teaspoon chili flakes (optional)

½ cup fresh mint or cilantro (optional)

Instructions

1. Heat a skillet over medium-high heat and add a bit of oil. Sauté the minced garlic for about 30 seconds until fragrant.

2. Add ground beef and cook until fully browned, breaking it up with a spoon.

3. Stir in soy sauce, fish sauce, and brown sugar. Add chili flakes if using, and let it simmer for 2–3 minutes.

4. Add chopped Thai basil and scallions. Stir to combine and remove from heat. Let it cool slightly.

5. Fill a shallow dish with warm water and dip a rice paper wrapper in for 5–8 seconds. Lay it flat on a clean surface.

6. Spoon the beef filling onto the lower third of the wrapper. Add mint or cilantro if desired.

7. Fold the bottom over the filling, tuck in the sides, and roll tightly. Repeat with remaining wrappers.

8. Slice rolls in half and serve with dipping sauce of choice (sweet chili, peanut, or lime-soy).

9. Store leftovers in the fridge wrapped individually to prevent sticking.

Notes

Work on a damp surface to prevent the rice paper from sticking or tearing.

Always cool the filling slightly before assembling to keep the wrapper intact.

Store with parchment or damp paper towels between rolls to prevent sticking.
