Ingredients

Scale

2 cups shredded cooked chicken

3 cups cooked rice

1 tablespoon olive oil

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 jalapeño, diced

1 packet taco seasoning

1 cup salsa

1 can black beans, drained and rinsed

1 cup corn kernels

1/2 cup sour cream

2 cups shredded Mexican cheese blend

1/2 cup sliced black olives

1/4 cup chopped cilantro

2 green onions, sliced

1 cup crushed tortilla chips

1/2 teaspoon salt

1/2 teaspoon black pepper

Instructions

1. Preheat the oven to 375°F and lightly grease a large casserole dish.

2. Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until softened.

3. Stir in the garlic and jalapeño, cooking for another minute until fragrant.

4. Add the shredded chicken and taco seasoning. Stir until the chicken is evenly coated with seasoning.

5. Pour in the salsa, black beans, and corn. Mix everything thoroughly and allow the mixture to simmer for several minutes.

6. Add the cooked rice and sour cream, stirring until the filling becomes creamy and fully combined.

7. Spread half of the mixture into the prepared casserole dish.

8. Sprinkle half of the shredded cheese over the first layer along with some crushed tortilla chips.

9. Add the remaining casserole mixture on top and finish with the rest of the cheese.

10. Scatter black olives over the casserole and bake uncovered for 25 to 30 minutes until hot and bubbly.

11. Remove the casserole from the oven and allow it to rest for 5 to 10 minutes before serving.

12. Garnish with chopped cilantro and green onions before serving warm.

Notes

Use rotisserie chicken to save preparation time and add extra flavor.

Freshly shredded cheese melts more smoothly than pre-packaged shredded cheese.

Allow the casserole to rest before slicing so the layers hold together better.
