These Taco Ranch Bites are a delicious, bite-sized twist on classic tacos! Crispy mini taco shells are filled with seasoned ground beef, gooey melted cheese, and a touch of zesty ranch, then topped with fresh tomatoes and cilantro. Perfect for parties, game nights, or a fun appetizer, these taco bites are quick, easy, and packed with flavor!

  • 12 mini taco shells or phyllo cups
  • 1/2 lb ground beef or turkey
  • 1 tbsp taco seasoning
  • 2 tbsp water
  • 2 tbsp ranch dressing (or 1 tsp ranch seasoning mix)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 2 tbsp chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). If using small tortillas to create taco cups, press them into a mini muffin tin and bake for 5-7 minutes until crisp.
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Season the meat by stirring in taco seasoning and water. Simmer for 2 minutes, then mix in ranch dressing or ranch seasoning.
  4. Assemble the taco bites by spooning the seasoned meat into the mini taco shells. Sprinkle with shredded cheese.
  5. Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  6. Top with diced tomatoes and chopped cilantro before serving.
