- 12 mini taco shells or phyllo cups
- 1/2 lb ground beef or turkey
- 1 tbsp taco seasoning
- 2 tbsp water
- 2 tbsp ranch dressing (or 1 tsp ranch seasoning mix)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced tomatoes
- 2 tbsp chopped cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). If using small tortillas to create taco cups, press them into a mini muffin tin and bake for 5-7 minutes until crisp.
- Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
- Season the meat by stirring in taco seasoning and water. Simmer for 2 minutes, then mix in ranch dressing or ranch seasoning.
- Assemble the taco bites by spooning the seasoned meat into the mini taco shells. Sprinkle with shredded cheese.
- Bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Top with diced tomatoes and chopped cilantro before serving.
- Enjoy warm, served with sour cream, salsa, or guacamole!
