  • 4 large sweet potatoes (peeled and cubed)
  • 1/4 cup butter (melted)
  • 1/4 cup milk (or dairy-free alternative)
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar (for topping)
  • 1/2 tsp cinnamon (for topping)
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Peel and cube the sweet potatoes. Boil them in water for 15-20 minutes, or until fork-tender. Drain and mash.
  3. In a large bowl, mix mashed sweet potatoes, melted butter, milk, brown sugar, eggs, vanilla extract, and cinnamon until smooth.
  4. Transfer the mixture to the prepared baking dish.
  5. In a small bowl, combine chopped pecans, brown sugar, and cinnamon. Sprinkle evenly over the casserole.
  6. Bake the casserole for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
  7. If adding marshmallows, sprinkle on top during the last 5 minutes of baking.
  8. Let the casserole cool for a few minutes before serving.
