1 lb ground sausage (pork, turkey, or chicken)

2 large sweet potatoes, peeled and diced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 cup frozen peas, thawed

1 small onion, finely chopped

2 cloves garlic, minced

1 1/2 cups shredded mozzarella or cheddar cheese

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp dried thyme

Salt and black pepper to taste

Fresh parsley for garnish (optional)


Instructions

1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until tender and caramelized.

2. In a large skillet, heat 1 tbsp olive oil. Cook sausage until browned, about 8-10 minutes. Remove and set aside.

3. In the same skillet, sauté onion, bell peppers, and garlic until softened. Add thyme, salt, and stir in peas. Cook another 1-2 minutes.

4. In a large bowl, mix roasted sweet potatoes, cooked sausage, and sautéed vegetables. Season with salt and pepper if needed.

5. Transfer mixture to a greased 9×13-inch baking dish. Top with shredded cheese.

6. Reduce oven temperature to 375°F (190°C). Bake uncovered for 15-20 minutes until cheese is melted. Broil for 2-3 minutes for a golden top.

7. Let rest 5 minutes. Garnish with chopped parsley before serving.


Notes

Roasting sweet potatoes before adding them to the casserole brings out their natural sweetness and keeps the texture firm.

For a spicy twist, try using hot Italian sausage or add red pepper flakes to the skillet.

This casserole can be made vegetarian with plant-based sausage alternatives and dairy-free cheese.
