- 3 pounds Yukon Gold potatoes, peeled and cut into chunks
- 6 tablespoons unsalted butter
- 3/4 cup heavy cream
- 1/4 cup whole milk
- 1 1/2 teaspoons salt (plus more for boiling water)
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 2 cloves garlic, roasted or sautéed (optional)
Instructions
- Peel and cut the potatoes into evenly sized chunks.
- Place potatoes in a large pot, cover with cold salted water, and bring to a boil.
- Reduce heat and simmer for 15–20 minutes, until fork-tender.
- While potatoes cook, heat cream and butter in a small saucepan until warm.
- Drain cooked potatoes and return them to the pot. Let them sit for 1–2 minutes to evaporate excess moisture.
- Mash the potatoes using a ricer or masher.
- Gradually mix in the warm cream and butter mixture until creamy.
- Stir in milk, salt, and pepper. Adjust seasoning to taste.
- Garnish with parsley and/or garlic if using. Serve hot.
