4 boneless skinless chicken breasts

2 cups prepared stuffing (homemade or boxed)

1/2 cup diced celery

1/2 cup chopped onion

1/2 cup chicken broth

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup prepared gravy (optional)


Instructions

1. In a skillet, melt butter over medium heat. Add celery and onion, sauté until soft (5–7 minutes).

2. Stir in stuffing mix and chicken broth until combined and moist. Let cool slightly.

3. Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.

4. Fill each breast with stuffing. Do not overpack. Use toothpicks to secure if necessary.

5. Season chicken with garlic powder, salt, and pepper.

6. Heat olive oil in an oven-safe skillet. Sear chicken for 2–3 minutes per side until golden.

7. Transfer skillet to a 375°F (190°C) oven and bake for 25–30 minutes or until internal temperature reaches 165°F (74°C).

8. Optional: Warm gravy and pour over chicken before serving. Let rest 5 minutes before slicing.
