3 cups strawberry velvet cake, crumbled and cooled

6 oz cream cheese, softened

12 oz white chocolate chips or melting wafers

1/4 cup pink candy melts or tinted white chocolate

2 tbsp crushed freeze-dried strawberries or reserved cake crumbs


Instructions

1. Bake or prepare the strawberry velvet cake and allow it to cool completely.

2. Crumble the cooled cake into fine crumbs using your hands or a food processor.

3. Add the softened cream cheese to the cake crumbs and mix until fully combined into a moist dough.

4. Roll mixture into 1 to 1.5 tablespoon-sized balls and place them on a parchment-lined baking sheet.

5. Chill the balls in the fridge or freezer for 15–30 minutes until firm.

6. Melt the white chocolate in a microwave or double boiler until smooth.

7. Dip each chilled truffle into the melted white chocolate and let the excess drip off.

8. Place the coated truffles back onto the parchment-lined sheet.
