Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/2 tsp baking powder

  • 1/2 cup unsalted butter, softened

  • 1 large egg

  • 1 tsp vanilla extract

  • 4 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 1/2 cup fresh strawberries, chopped

  • 1/2 cup flour (for crumble)

  • 1/4 cup granulated sugar (for crumble)

  • 1/4 cup butter, softened (for crumble)


Instructions

  1. Prepare the Cookie Dough:

    • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

    • Add the egg and vanilla extract, mixing until well combined.

    • Gradually add flour, baking powder, baking soda, and salt. Mix until a smooth dough forms.

    • Chill the dough in the refrigerator for 30 minutes.

  2. Make the Cream Cheese Layer:

    • Beat the softened cream cheese and powdered sugar until smooth. Set aside.

  3. Prepare the Strawberry Crumble:

    • Toss chopped strawberries with a little flour.

    • Combine flour, sugar, and butter until the mixture resembles coarse crumbs. Gently fold in strawberries.

  4. Assemble the Cookies:

    • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    • Roll chilled dough into balls and flatten slightly.
