Ingredients
1.5 lbs sirloin steak, cubed
1.5 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
0.5 tsp smoked paprika
1 tbsp olive oil
1 tbsp unsalted butter
2 tbsp unsalted butter
4 cloves garlic, minced
1 cup heavy cream
0.5 cup freshly grated parmesan cheese
0.5 tsp Italian seasoning
0.25 tsp crushed red pepper flakes
Salt and pepper to taste
2 tbsp fresh parsley, chopped
12 oz rotini pasta
Salted water for boiling
1 tsp olive oil (optional)

Instructions
1. Bring a large pot of salted water to a boil. Cook rotini until just al dente. Drain and set aside.
2. Pat steak cubes dry. Toss with salt, pepper, garlic powder, and smoked paprika.
3. Heat cast iron skillet over high heat. Add olive oil and butter.
4. Sear steak bites in a single layer for 2–3 minutes per side until browned. Do not overcrowd the pan. Set aside.
5. Lower heat to medium and add butter to same skillet. Sauté minced garlic for 1 minute.
6. Add heavy cream, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes to thicken.
7. Stir in parmesan cheese until smooth and melted. Season with salt and pepper.
8. Mix in chopped parsley. Add cooked rotini and toss to coat.
9. Plate the pasta and top with steak bites. Garnish with extra parsley and shaved parmesan if desired.
