Ingredients
1 pound ground beef
2 cups cooked jasmine rice
1 medium zucchini, sliced
1 red bell pepper, sliced
1 ½ cups broccoli florets
1 cup mushrooms, sliced
4 cloves garlic, minced
3 tablespoons soy sauce
1 teaspoon sesame oil
½ teaspoon red pepper flakes (or to taste)
2 tablespoons olive oil or stir-fry oil
Instructions
1. Cook jasmine rice according to package directions. Set aside and keep warm.
2. In a large skillet or wok over medium-high heat, heat 1 tablespoon oil. Stir-fry broccoli, zucchini, and bell pepper for 5–6 minutes.
3. Add mushrooms and garlic to the pan. Stir for another 2–3 minutes. Remove all vegetables from the skillet and set aside.
4. In the same pan, add a little more oil if needed and brown the ground beef. Break it up as it cooks. Drain excess fat if necessary.
5. Add soy sauce, sesame oil, and red pepper flakes to the beef. Stir well and simmer for 2–3 minutes until slightly thickened.
6. Return the veggies to the pan and toss everything together until coated and heated through.
7. Spoon warm rice into serving bowls, top with beef and veggie stir-fry mixture.
8. Garnish with optional toppings like green onions, sesame seeds, or a soft-boiled egg. Serve hot.
Notes
For best results, stir-fry on high heat in a wide pan to keep veggies crisp and vibrant.
