Ingredients

12 dumplings (pork, chicken, veggie, or shrimp)

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon dark soy sauce

2 tablespoons chili oil

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 teaspoons grated ginger

4 cloves garlic, finely minced

1 teaspoon sugar

Salt to taste

1 tablespoon toasted sesame seeds

2 tablespoons chopped scallions

Extra chili crisp or chili oil (optional)


Instructions

1. In a deep saucepan, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.

2. Pour in broth, soy sauces, vinegar, chili oil, and sugar. Stir well and bring to a boil.

3. Lower the heat to simmer for 10 minutes to let flavors develop. Taste and adjust seasoning.

4. Add raw or thawed dumplings to the simmering broth. Cook 6-8 minutes until fully done.

5. If using pre-cooked dumplings, add and simmer for 4-5 minutes until heated through.

6. Turn off heat and add scallions, sesame seeds, and more chili oil or crisp if desired.

7. Ladle soup and dumplings into bowls. Serve hot and enjoy immediately.


Notes

For richer flavor, add a spoonful of miso paste or a splash of fish sauce to the broth.

Keep dumplings and broth stored separately if making ahead to avoid sogginess.

Adjust the spice level gradually—you can always add more heat but can’t take it away!
