2 large boneless skinless chicken breasts

1 ½ tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

8 oz linguine pasta

1 tablespoon olive oil

3 tablespoons unsalted butter

4 garlic cloves minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and black pepper to taste

½ teaspoon red pepper flakes

¼ cup reserved pasta water

¼ cup chopped fresh parsley


Instructions

1. Pat chicken breasts dry and season both sides with Cajun seasoning, paprika, garlic powder, salt, and pepper. Let them rest at room temperature.

2. Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain, reserve ¼ cup of pasta water, and toss pasta with a little olive oil.

3. In a heavy skillet over medium-high heat, add olive oil and butter. Sear chicken 4–5 minutes per side until golden brown and cooked through. Remove and rest.

4. In the same skillet, lower heat and add butter. Sauté garlic for 1 minute. Pour in cream and simmer gently.

5. Whisk in Parmesan until sauce is smooth. Add red pepper flakes, salt, and pepper to taste.

6. Add linguine to the sauce and toss to coat. Use reserved pasta water to loosen the sauce if needed.

7. Slice chicken and layer on top of the pasta. Garnish with parsley and extra Parmesan.
