Ingredients
3 lbs apples, peeled, cored, and finely chopped
1 ½ cups granulated sugar
½ cup brown sugar
¼ cup lemon juice
1 tsp ground cinnamon
½ tsp ground cloves
¼ tsp ground nutmeg
1 tbsp vanilla extract
1 packet (1.75 oz) powdered pectin
½ cup water
Instructions
1. Peel, core, and finely chop the apples.
2. Add apples, granulated sugar, brown sugar, lemon juice, water, cinnamon, cloves, and nutmeg to a large pot. Stir and bring to a gentle boil.
3. Simmer for 15–20 minutes until apples soften.
4. (Optional) Use an immersion blender to puree the mixture for a smoother texture.
5. Stir in powdered pectin and bring to a full rolling boil for 1–2 minutes, stirring constantly.
6. Remove from heat and stir in vanilla extract.
7. Ladle hot jam into sterilized jars, leaving ¼ inch headspace. Seal with lids and rings.
8. Process in boiling water bath for 10 minutes or refrigerate if consuming within 3 weeks.
Notes
Use a mix of sweet and tart apples for the best flavor.
Add the vanilla only after boiling to preserve its aromatic quality.
