  • 1 cup yellow cornmeal (medium grind recommended)
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 large egg
  • 3/4 cup milk or buttermilk
  • 1/4 cup unsalted butter, melted (plus more for glaze)
  • 2 tablespoons honey (plus more for glaze)
  • Optional: chopped herbs, sea salt for topping

Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin tin with butter or nonstick spray.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk egg, milk, melted butter, and honey until smooth.
  4. Combine wet and dry ingredients, stirring gently until just mixed. Do not overmix.
  5. Fill mini muffin cups about 3/4 full with batter.
  6. Bake for 12–15 minutes, or until tops are golden and a toothpick comes out clean.
  7. While still warm, brush with a glaze made of melted butter and honey.
  8. Sprinkle with coarse sea salt or chopped herbs if desired.
