- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp salt
- ¾ cup brown sugar
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk or buttermilk
- 1 ½ cups freshly grated carrots
- (Optional) ½ cup chopped walnuts or raisins
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk brown sugar, oil, eggs, and vanilla until smooth. Stir in milk.
- Gradually add wet ingredients to dry ingredients, stirring until just combined.
- Fold in grated carrots and any optional mix-ins (walnuts or raisins).
- Divide batter evenly into muffin cups, filling each about ¾ full.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
