Ingredients
3 cups all-purpose flour
1 cup warm water
2¼ teaspoons active dry yeast
1 tablespoon sugar
1 teaspoon salt
2 tablespoons olive oil (plus extra for brushing)
2 large yellow onions, thinly sliced
1½ cups shredded cheese (mozzarella, cheddar, or a blend)
2 tablespoons chopped fresh chives (optional)
Instructions
1. In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
2. Add flour, salt, and olive oil. Stir until a soft dough forms, then knead for 8–10 minutes until smooth.
3. Cover and let rise for 1 to 1.5 hours or until doubled in size.
4. While dough rises, caramelize onions in olive oil over medium heat for 20–25 minutes, stirring occasionally. Set aside to cool.
5. Punch down the dough and press into a greased 9×13-inch baking pan.
6. Let dough rise again for 20–30 minutes.
7. Top evenly with caramelized onions, shredded cheese, and chives (if using).
8. Bake at 400°F (200°C) for 20–25 minutes, until golden and cheese is bubbly.
9. Let cool slightly before slicing and serving.
Notes
Store leftovers wrapped tightly at room temperature for 2 days or refrigerate up to 5 days.
Freeze individually wrapped slices for up to 2 months.
Reheat in a 350°F oven for 5–7 minutes for best texture.
