2 pounds Russet potatoes

2 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1/2 cup heavy cream, warmed

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Peel the potatoes and cut them into 1 1/2-inch chunks.

2. Place the potato chunks in cold salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let steam off.
