  • 1 lb smoked sausage, sliced into rounds
  • 4 medium Yukon Gold or red potatoes, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil or butter.
  2. Add the diced potatoes in an even layer and cook for about 5 minutes without stirring.
  3. Stir and continue cooking for another 10 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  4. Push the potatoes to one side of the skillet and add the sliced smoked sausage. Brown for 2-3 minutes per side.
  5. Add the diced onion and minced garlic. Stir everything together and cook for another 5 minutes until the onions are soft.
  6. Sprinkle in the salt, pepper, paprika, Italian seasoning, and red pepper flakes if using. Stir to evenly coat the ingredients.
  7. Let cook for another 2-3 minutes, then remove from heat.
  8. Serve hot, garnished with fresh herbs or cheese if desired.
