- 1 lb smoked sausage, sliced into rounds
- 4 medium Yukon Gold or red potatoes, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil or butter.
- Add the diced potatoes in an even layer and cook for about 5 minutes without stirring.
- Stir and continue cooking for another 10 minutes, stirring occasionally, until the potatoes are golden brown and tender.
- Push the potatoes to one side of the skillet and add the sliced smoked sausage. Brown for 2-3 minutes per side.
- Add the diced onion and minced garlic. Stir everything together and cook for another 5 minutes until the onions are soft.
- Sprinkle in the salt, pepper, paprika, Italian seasoning, and red pepper flakes if using. Stir to evenly coat the ingredients.
- Let cook for another 2-3 minutes, then remove from heat.
- Serve hot, garnished with fresh herbs or cheese if desired.
