- 1 lb smoked sausage, sliced into rounds
- 1.5 lbs Yukon Gold or red potatoes, diced
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp paprika (or smoked paprika)
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat 1 tbsp olive oil and butter in a large skillet over medium-high heat.
- Add diced potatoes in a single layer and cook undisturbed for 5-7 minutes. Stir occasionally until golden brown and tender, about 10-12 minutes. Remove and set aside.
- In the same skillet, add the sliced smoked sausage. Cook for 3-4 minutes per side until browned and slightly crispy. Remove and set aside.
- Add remaining olive oil to the skillet. Sauté chopped onions and bell peppers for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
- Return the potatoes and sausage to the skillet. Sprinkle with paprika, Italian seasoning, salt, and black pepper. Stir well and cook for another 2-3 minutes.
- Garnish with fresh parsley if desired and serve hot.
