  • 1 lb smoked sausage, sliced into rounds
  • 1.5 lbs Yukon Gold or red potatoes, diced
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp paprika (or smoked paprika)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tbsp olive oil and butter in a large skillet over medium-high heat.
  2. Add diced potatoes in a single layer and cook undisturbed for 5-7 minutes. Stir occasionally until golden brown and tender, about 10-12 minutes. Remove and set aside.
  3. In the same skillet, add the sliced smoked sausage. Cook for 3-4 minutes per side until browned and slightly crispy. Remove and set aside.
  4. Add remaining olive oil to the skillet. Sauté chopped onions and bell peppers for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  5. Return the potatoes and sausage to the skillet. Sprinkle with paprika, Italian seasoning, salt, and black pepper. Stir well and cook for another 2-3 minutes.
  6. Garnish with fresh parsley if desired and serve hot.
