Ingredients
- 1 lb ground beef (80/20)
- 4 slices sharp cheddar cheese
- 1/2 cup pickled jalapeno slices
- 4 brioche buns
- 2 tbsp butter (for toasting buns)
- Salt & pepper (to taste)
For Spiced Mayo:
- 1/3 cup mayonnaise
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Pinch of cayenne pepper (adjust to taste)

Make the spiced mayo: In a small bowl, mix mayonnaise, paprika, garlic powder, and cayenne. Set aside.

Toast the buns: Spread butter on the cut sides of the brioche buns. Toast in a hot skillet until golden. Set aside.

Heat the skillet: Place a cast-iron skillet or griddle over medium-high heat until very hot.

Shape and smash the patties: Form the ground beef into 4 loose balls. Place one on the skillet and immediately smash flat with a spatula. Season with salt and pepper.

Cook the patties: Let cook undisturbed for 2–3 minutes to form a crust. Flip, add a slice of cheddar, and cook another 1–2 minutes until the cheese melts.

Assemble the burger: Spread spiced mayo on both bun halves. Place a patty on the bottom bun, top with pickled jalapenos, and cover with the top bun.
