- 2 lbs chuck steak or sirloin, cut into bite-sized pieces
- 2 lbs Yukon Gold potatoes, peeled and chopped into 1-inch cubes
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups shredded sharp cheddar cheese
- 1 cup beef broth
- 1 tsp paprika
- Salt and pepper, to taste
- Fresh parsley or chives for garnish (optional)
Instructions
- Dice steak into bite-sized pieces and season with salt and pepper.
- (Optional) Sear steak in a hot skillet for 2–3 minutes per side for added flavor.
- Peel and cube potatoes, dice onion, and mince garlic.
- In a slow cooker, layer half of the potatoes, then half of the steak, onions, garlic, salt, pepper, and paprika. Repeat with the remaining ingredients.
- Pour beef broth evenly over the top.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- In the final 20–30 minutes, sprinkle shredded cheddar cheese on top and cover until melted.
- Garnish with chopped parsley or chives before serving, if desired.
