- 2 pounds beef stew meat, cut into bite-sized chunks
- 1 ½ pounds baby potatoes, halved if large
- 5 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon olive oil (for searing)
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon smoked paprika
- ¼ cup beef broth
- 2 tablespoons fresh parsley, chopped (for garnish)
Optional:
- ½ onion, finely chopped
- 1 tablespoon Worcestershire sauce
Instructions
- Heat olive oil in a skillet over medium-high heat. Pat beef dry, season with salt and pepper, and sear in batches until browned on all sides.
- In a small saucepan, melt butter over low heat. Stir in garlic, thyme, rosemary, and smoked paprika. Cook for 1–2 minutes until fragrant.
- Add halved baby potatoes to the bottom of the slow cooker. Pour half the garlic butter mixture over them.
- Layer the seared beef on top of the potatoes. Drizzle with the remaining garlic butter and beef broth.
- Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender and potatoes are soft.
- Stir gently before serving and garnish with fresh parsley.
