  • 2 pounds beef stew meat, cut into bite-sized chunks
  • 1 ½ pounds baby potatoes, halved if large
  • 5 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 tablespoon olive oil (for searing)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon smoked paprika
  • ¼ cup beef broth
  • 2 tablespoons fresh parsley, chopped (for garnish)

Optional:

  • ½ onion, finely chopped
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Pat beef dry, season with salt and pepper, and sear in batches until browned on all sides.
  2. In a small saucepan, melt butter over low heat. Stir in garlic, thyme, rosemary, and smoked paprika. Cook for 1–2 minutes until fragrant.
  3. Add halved baby potatoes to the bottom of the slow cooker. Pour half the garlic butter mixture over them.
  4. Layer the seared beef on top of the potatoes. Drizzle with the remaining garlic butter and beef broth.
  5. Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender and potatoes are soft.
  6. Stir gently before serving and garnish with fresh parsley.
