Ingredients
3 to 4 pounds chuck roast
1 tablespoon olive oil
1 large yellow onion, thinly sliced
3 cloves garlic, minced
4 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon black pepper
Salt to taste
6 French rolls or hoagie buns
6 slices provolone cheese
Fresh parsley, optional
Instructions
1. Pat chuck roast dry, season with salt and pepper, and sear in olive oil over medium-high heat until browned on both sides.
2. Place roast in slow cooker. Add sliced onions and garlic. Pour in beef broth, Worcestershire sauce, and soy sauce. Add thyme, rosemary, and black pepper.
3. Cover and cook on low for 8-10 hours or high for 5-6 hours until beef is tender.
4. Remove roast, shred with forks, discard fat, and return meat to juices in slow cooker for 15-20 minutes.
5. Preheat oven to 400°F or broiler to low. Slice rolls, place open-faced on a baking sheet, and toast for 2-3 minutes.
6. Add shredded beef to each toasted roll, top with provolone cheese, and return to oven until cheese melts, about 2-4 minutes.
