2 tablespoons olive oil or unsalted butter

1 small onion, finely chopped

2 garlic cloves, minced

8 oz fresh mushrooms, sliced

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1/2 cup sour cream

2 cups cooked roast beef, sliced or shredded

Salt and black pepper to taste

Fresh parsley, chopped

Cooked rice or egg noodles, for serving


Instructions

1. In a large skillet over medium heat, add olive oil or butter. Sauté the chopped onion for 3–4 minutes until soft and translucent. Add garlic and cook for 30 seconds.

2. Add the mushrooms and sauté for 6–8 minutes until browned and tender.

3. Sprinkle in the flour and stir for 1–2 minutes to form a roux.

4. Slowly pour in beef broth while stirring. Add Worcestershire sauce and Dijon mustard. Simmer for 5–6 minutes until thickened.

5. Stir in the roast beef and heat through for 3–4 minutes.

6. Remove from heat and fold in sour cream gently until fully incorporated. Season with salt and pepper to taste.

7. Serve over rice or noodles and garnish with fresh parsley.


Notes

Always turn off the heat before adding sour cream to avoid curdling.

Slice beef thinly against the grain to keep it tender.
