Ingredients
- 1 pound (450g) ground beef (lean)
- 1 medium onion, finely diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup sweet corn kernels, frozen or canned, drained
- 1 can (15 oz) diced tomatoes, with juices
- 2 tablespoons tomato paste
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon oregano
- Salt and black pepper, to taste
- 1 tablespoon olive oil (for sautéing)
- Optional toppings: shredded cheddar cheese, chopped fresh cilantro, sour cream, sliced jalapeños
Instructions
- Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add diced onions and cook until soft and translucent (about 3-4 minutes). Add garlic and cook for another minute. -
Brown the Ground Beef
Add ground beef to the pot and cook, breaking it apart, until browned. Drain excess fat if necessary. -
