  • 1 pound (450g) ground beef (lean)
  • 1 medium onion, finely diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup sweet corn kernels, frozen or canned, drained
  • 1 can (15 oz) diced tomatoes, with juices
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for sautéing)
  • Optional toppings: shredded cheddar cheese, chopped fresh cilantro, sour cream, sliced jalapeños

Instructions

  • Sauté the Aromatics
    Heat olive oil in a large pot over medium heat. Add diced onions and cook until soft and translucent (about 3-4 minutes). Add garlic and cook for another minute.
  • Brown the Ground Beef
    Add ground beef to the pot and cook, breaking it apart, until browned. Drain excess fat if necessary.

  • Add the Veggies
    Stir in the diced bell peppers and cook for about 5 minutes until softened.

  • Spice It Up
    Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well and cook for 1-2 minutes to allow the spices to bloom.

  • Add Beans, Tomatoes, and Broth
