Ingredients
Scale
- 4 bone-in, skin-on chicken thighs
- Salt and black pepper to taste
- 2 tablespoons olive oil or butter
- 3–4 garlic cloves, minced
- 8 oz mushrooms, sliced (cremini or button)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon fresh parsley, chopped
Instructions
- Pat chicken thighs dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 6–8 minutes until golden and crisp. Flip and cook for 5 more minutes. Remove and set aside.
- In the same pan, add mushrooms and sauté for 5–6 minutes until browned. Add garlic and cook 1 minute more.
- Pour in chicken broth to deglaze the pan, scraping up the brown bits. Let simmer 2–3 minutes.
- Stir in heavy cream and Dijon mustard (if using). Return chicken to skillet, skin-side up. Simmer on low for 10–15 minutes, covered.
- Garnish with fresh parsley and serve hot.
