  • 1 cup zucchini (optional), cut into half-moons
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • Fresh parsley (for garnish)



Instructions

  1. Preheat Oven: Set oven to 425°F (220°C) and line a sheet pan with parchment paper (optional for easy cleanup).
  2. Prepare Ingredients: Slice the sausage into rounds, halve the potatoes, and chop all vegetables into uniform pieces.
  3. Season Everything: In a large mixing bowl, toss the sausage and veggies with olive oil, garlic powder, smoked paprika, oregano, salt, black pepper, and red pepper flakes.
