1.5 pounds ground beef (80/20 or leaner)

1 cup Italian-style breadcrumbs

2 large eggs

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/2 medium onion, finely chopped

1 tablespoon Italian seasoning

2 tablespoons fresh parsley, chopped

1/4 teaspoon crushed red pepper flakes (optional)

1 teaspoon salt

1/2 teaspoon black pepper

8 ounces mozzarella cheese, cubed or sliced (block-style)

1 cup marinara sauce (plus extra for serving)


Instructions

1. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or grease it lightly.

2. In a large bowl, mix together the ground beef, breadcrumbs, eggs, Parmesan, garlic, onion, Italian seasoning, parsley, red pepper flakes, salt, and pepper. Mix just until combined.

3. Divide the meat mixture into two equal parts. Press the first half into the bottom of the pan and create a shallow trench.

4. Lay mozzarella slices or cubes into the center trench evenly. Cover with the remaining meat mixture, pressing and sealing the cheese inside.

5. Spoon marinara sauce generously over the top of the loaf, smoothing it out with a spoon.

6. Bake uncovered for 50–60 minutes or until the internal temperature reaches 160°F (71°C).

7. Optionally, add more mozzarella or Parmesan on top during the last 10 minutes for an extra cheesy crust.

8. Remove from oven and let it rest for 10 minutes before slicing.

9. Serve warm, optionally with extra marinara on the side.

10. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.


Notes

Always use block mozzarella for a melty center; pre-shredded cheese won’t melt as well.

Let the meatloaf rest before slicing to keep it juicy and prevent crumbling.

For a lighter version, swap beef with ground turkey and add a drizzle of olive oil for moisture.
