- Salt and pepper, to taste
- Juice of 1/2 lemon (optional)
For the Zucchini:
- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon dried Italian seasoning
- Salt and pepper, to taste
- Fresh parsley or basil, chopped (for garnish)

- Grated parmesan
- Red pepper flakes
Instructions
- Pat chicken breasts dry. Rub with olive oil, garlic, oregano, basil, thyme, paprika, salt, and pepper. Optional: let marinate for 15–30 minutes.
- Heat skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through (165°F internal temperature). Remove and let rest.
- In same skillet, add oil if needed. Sauté zucchini with garlic, Italian seasoning, salt, and pepper until tender and lightly golden, about 5–7 minutes.
- Slice rested chicken and plate with zucchini. Drizzle with lemon juice if using. Garnish with herbs, parmesan, or red pepper flakes.
