For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Juice of 1/2 lemon (optional)

For the Zucchini:

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Optional Add-ons:

  • Grated parmesan
  • Red pepper flakes

Instructions

  1. Pat chicken breasts dry. Rub with olive oil, garlic, oregano, basil, thyme, paprika, salt, and pepper. Optional: let marinate for 15–30 minutes.
  2. Heat skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through (165°F internal temperature). Remove and let rest.
  3. In same skillet, add oil if needed. Sauté zucchini with garlic, Italian seasoning, salt, and pepper until tender and lightly golden, about 5–7 minutes.
  4. Slice rested chicken and plate with zucchini. Drizzle with lemon juice if using. Garnish with herbs, parmesan, or red pepper flakes.
