Ingredients
1 lb boneless skinless chicken breast
16 oz potato gnocchi (shelf-stable)
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/4 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
Salt to taste
Black pepper to taste
1/4 tsp red pepper flakes (optional)
Fresh parsley, for garnish
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning.
2. Heat olive oil and butter in a large skillet over medium-high heat.
3. Sear the chicken on both sides until golden and cooked through, about 5–7 minutes per side. Remove and set aside.
4. In the same skillet, add the gnocchi and toast for 3–4 minutes until lightly golden. Remove and set aside.
5. Reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant.
6. Pour in chicken broth to deglaze the pan, scraping up any brown bits.
7. Stir in heavy cream and simmer for 3–4 minutes to slightly thicken.
8. Add grated Parmesan, spinach, and sun-dried tomatoes. Stir until spinach wilts and cheese melts.
9. Return chicken and gnocchi to the skillet. Stir gently to coat everything in the sauce. Simmer for another 2–3 minutes.
10. Garnish with fresh parsley and extra Parmesan if desired. Serve hot.
