Ingredients
500g boneless skinless chicken thighs or breasts
1 cup all-purpose flour
1/2 cup cornstarch
2 eggs
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Oil for frying (or for baking)
1 cup BBQ sauce
2 tbsp chopped chives or green onions (optional garnish)
Instructions
1. Cut the chicken into bite-sized chunks and pat them dry with paper towels.
2. In a bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
3. In another bowl, beat the eggs.
4. Dip each chicken piece in the eggs, then dredge in the flour mixture until fully coated.
5. Heat oil in a deep skillet to 350°F (175°C) and fry chicken in batches for 4–5 minutes until golden brown, or bake at 425°F (220°C) for 20–25 minutes.
6. In a bowl, warm the BBQ sauce slightly. Add cooked chicken and toss to coat.
7. Garnish with chopped chives or green onions if desired. Serve hot.
Notes
For extra crispiness, double-dip the chicken pieces in the flour and egg mixture.
Use a wire rack for baking to allow even air circulation and better texture.
Warming the BBQ sauce before tossing helps it coat the bites evenly and enhances flavor.
