- 8 cooked breakfast sausage links
- 2 large eggs
- 1/4 cup milk (any kind)
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract (optional)

- Maple syrup or powdered sugar (for serving)
Instructions
- Trim crusts from bread and flatten each slice with a rolling pin.
- Place one sausage link on the edge of each bread slice and roll tightly.
- In a shallow bowl, whisk eggs, milk, cinnamon, and vanilla (if using).
- Dip each roll-up in the egg mixture, coating all sides.
- Melt butter in a non-stick skillet over medium heat.
- Place roll-ups seam-side down and cook, turning until all sides are golden and crisp (5–7 minutes total).
- Serve warm with maple syrup or a dusting of powdered sugar.
