- 2 large sweet potatoes, peeled and cubed

- Salt and black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Spread cubed sweet potatoes on a baking sheet. Drizzle with olive oil, season with thyme, salt, and pepper. Toss to coat.
