  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cubed sweet potatoes on a baking sheet. Drizzle with olive oil, season with thyme, salt, and pepper. Toss to coat.
  3. Roast sweet potatoes for 20 minutes.
